HOW OFTEN SHOULD YOU WEIGH YOURSELF?

Never. Just kidding.
If you are going to weigh yourself I would recommend once per week on a Monday. Same time same place same scales.
For the most part I think it is important to base your targets and goals off how you improve the way you look and performance in the gym not just some number on the scales which can be an innacurate representation of your stats.
Look at me currently. I am 181cm which is almost 6 foot tall. When I am lean I can get down as light as 75kg which is 165 Pounds.
For the most part I sit around 82-83kg when I am not completely dialled in. Still by some standards this isn’t much for a muscular male who trains. But do I care? I know for my body if I weighed 90kg or more I would just look puffy and unhealthy. That’s me personally.
You cannot compare weight to others. Everyone has different factors the biggest one being different bone density’s.
